Spicy Mayo-Marinated Bang Bang Chicken Skewers

With Peanut Tahini Dipping sauce

MAYO MARINATED CHICKEN:

  • 600g free-range chicken thighs, diced 2cm

  • 2 cloves garlic, minced

  • 2 tsp each grated ginger & fresh lime juice

  • 3 Tbsp SideCar original mayonnaise

  • 1 Tbsp sriracha hot sauce

  • 1 tsp each flaky sea salt & white sugar

  • 1⁄2 tsp each chilli flakes & sesame oil

BANG BANG SAUCE:

  • 2 Tbsp crunchy peanut butter

  • 2 Tbsp tahini

  • 2 Tbsp crushed sesame seeds (see tip) + extra to garnish

  • 2 Tbsp each soy sauce & SideCar original mayonnaise

  • 1 Tbsp each black vinegar, chilli oil & maple syrup

  • 1 clove garlic, minced

    TO GARNISH:

  • 2 spring onions, thinly sliced

  • 1 handful coriander leaves

Mayo Marinated Chicken: Add all of the ingredients to a large bowl and toss together, until the chicken is well coated. Set aside to marinate for 1 hour (or, you can make the skewers straight away). Once marinated, thread the chicken onto five large metal skewers (or soaked wooden skewers).

Bang Bang Sauce: Add the peanut butter, tahini, crushed sesame seeds, soy sauce, mayonnaise, black vinegar, chilli oil, maple syrup and garlic to a medium bowl along with 2 Tbsp water. Whisk together, until combined. Season to taste with more soy sauce, if needed.

Cook Chicken: Preheat your BBQ grill to high. Cook the skewers for 12-15 minutes, turning often, until golden brown and cooked through. Alternatively, use a griddle pan instead or grill them in the oven on high (turning half-way through cooking).

To Serve: Place the chicken skewers onto a platter, then drizzle over about 1⁄3 cup of the bang bang sauce. Drizzle over a little chilli oil, if desired. Garnish with the spring onion, coriander and a pinch of crushed sesame.

Tip* To make crushed sesame seeds, add some toasted sesame seeds to a nutribullet or mini food processor. Pulse several times, until the sesame seeds are coarsely ground.
